Low Fructose Acai and Blueberry Smoothie Bowl

I love a good smoothie bowl, light and refreshing but i’m not so good with too much fruit. All the sugar plays havoc with the gut health so I made this Low Fructose Acai and Blueberry Smoothie Bowl for those of you watching your sugar intake too. It’s low in fructose and uses just berries to sweeten.

Keto, Paleo, GAPS and Whole30 friendly. It’s also great if you’re reintroducing from the Autoimmune Protocol by using just a little almond milk. I love it. I hope you do too.

Feel free to top with whatever nuts, seeds or chocolate you like. A good dollop of nut butter would totally work too. Not that i’m an addict or anything!

Low Fructose Acai and Blueberry Smoothie Bowl
Overview
Serves:
1
Cooking Time: 10 minutes
  • 1/2 cup coconut yoghurt (or Greek if not dairy free)
  • 1/3 cup almond milk
  • 130 g blueberries
  • 3 tsp chia seeds (I like Naturya)
  • 1/2 tsp acai powder (I like Naturya)
Topping
  • 1 tbsp desiccated coconut (I like Coconut Merchant)
  • 1 tbsp shelled hemp seeds
  • 1 tbsp raw cacao nibs (I like Naturya)
  • 2 tbsp blueberries
Method
  • Blitz all the smoothie ingredients together in a high speed blender. I use a Vitamix as it makes it super light.
  • Pour into a bowl and top with desiccated coconut, hemp seeds, raw cacao nibs and fresh blueberries.
