If you’re an overnight oats fan, my Vegan Apple Pie Overnight Oats are a must make. They’re the creamiest and best overnight oats ever! Today I made a cheats apple pie version using a combination of grated and sliced apple with cinnamon but you can use this base recipe and pair with any topping you like. Raisins are also a nice addition if you can tolerate dried fruit. 

How to make Overnight Oats Super Creamy Without Dairy

The key to making the creamiest vegan overnight oats is to use a combination of nut milk and coconut yoghurt. I like to use Plenish unsweetened almond milk and Coyo vanilla coconut yoghurt or natural. They’re my absolute favourites because both don’t contain any gums, carrageenan or added sweeteners. Just the good stuff. These Apple Pie Overnight Oats are also delicious with oat or cashew milk if you prefer.

Vegan Apple Pie Overnight Oats

INGREDIENTS

  • 140 g jumbo oats (option to use gluten free oats)
  • 400 ml unsweetened almond milk (or dairy free nut milk of choice)
  • 1 tsp coconut honey or maple syrup (or to taste. Option to omit for a sweetener free version)
  • 20 g wanuts, chopped
  • 1 - 2 tsp cinnamon powder (or to taste)
  • 2 - 3 tbsp coconut yoghurt

To Serve

  • 20 g flaked almonds
  • 20 g gluten free granola or shelled hemp seeds
  • 1/2 apple, grated or sliced
  • 1 tsp coconut honey or maple syrup (or to taste. Option to omit for a sweetener free version)

Method

  • Mix the oats with the almond milk, 1 tsp of maple syrup or sweetener of choice, walnuts and 1 tsp of cinnamon. Leave covered in the fridge overnight. If you’re in a rush, you can let them rest for just 10 - 30 minutes until soft.
  • When ready to serve, stir though the coconut yoghurt, apple and top with a sprinkling of granola, flaked almonds, apple slices, cinnamon and 1 tsp of maple.

Top Tips On How To Make These Apple Pie Overnight Oats Extra Special

  • My favourite way to enjoy this is, when ready to serve, grate 1/4 apple and stir through the oats add add a few whole slices or chopped apple on top for different textures.
  • Option to toast the almond flakes. To do this, preheat the oven to 200C / 180 fan. Place the almonds on a non stick baking tray and roast for 4 - 6 minutes until golden or dry fry in a non stick frying pan on a medium / low heat until golden. Allow to cool before serving.
