
Good morning guys. If you’re looking for a grain and gluten free oats alternative, my vegan keto oatmeal is a winner. It’s high in protein and dairy free making it a great way to start the day.
Sugar free to keep your gut happy
Not only is it sugar free, it’s also unsweetened so perfect for those of you, who like me, like to keep your sugar intake low. Keeping your sugar intake down, including the healthier refined sugar free versions, helps keep the balance of healthy v unhealthy bacteria in your gut in check. It’s one of the key things I believe has kept my autoimmune condition in remission all these years.
Today I made a simple coulis out of fresh berries and added some ground cinnamon and vanilla as it’s turning autumn here in London so i’m craving more warming spices. Feel free to add some coconut honey, or erythritol/ swerve if you’re keto, if you prefer things a little sweeter.
This Keto Oatmeal is also paleo, vegan, grain and gluten free, gaps and whole30 friendly. Breakfast or pudding… which would you choose?




Vegan Keto Oatmeal with Cinnamon Spiced Berries
Ingredients
- 3 tbsp chia seeds
- 1 tbsp flax seeds
- 250 ml almond milk
- 125 g coconut yoghurt (I like COYO Natural)
- 1/2 tsp vanilla powder
- 2 tbsp desiccated coconut (I like Coconut Merchant Desiccated Coconut)
- 2 tbsp coconut chips (I like Coconut Merchant Coconut Chips)
- 2 tbsp flaked almonds
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
Spiced Berries
- 100 g blackberries or blueberries
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla powder
- 1 tbsp nut butter (optional but is delicious!)
Method
- Preheat the oven to 180C fan assisted. (200C/ 400F.)
- Place the flax and chia in a glass jar or bowl. (Option to use all chia, 4 tbsp, if you prefer.) Add the almond milk and vanilla and soak for 30 minutes. Stir a few times whilst it's soaking to prevent clumping.
- Meanwhile, place the pumpkin, sunflower seeds and flaked almonds on a baking tray. Roast for 2 minutes. Add the desiccated coconut and coconut chips and roast together for a further 3 minutes until golden. Remove from the oven and allow to cool.
- Once the chia mix soaking time is up, stir in the coconut yoghurt. Option to add a little more almond milk if you like it thinner.
- Place the berries in a Vitamix (or high speed/ hand blender equivalent) and blitz until smooth. Stir through the vanilla and cinnamon.
- Mix the toasted coconut, almonds and seeds into the vegan keto oatmeal and top with the unsweetened, sugar free spiced berries.
