
Good Morning guys! So many smoothies these days contain a lot of fruit. Whilst fruit can be good for you, it’s still full of sugar so if like me you have an autoimmune condition of suffer with gut issues it’s good to stick to low carb, low gi fruits like berries. When I was healing the fruit had to go. Truth is it played havoc with my gut bacteria. If you’re looking for a smoothie that’s fruit free and packed just with veggies my Kale and Almond Butter Smoothie is one to try.
It’s sweetened naturally with just a little carrot. Full of cleansing greens, it’s a satiating LCHF way to start the day.
Deliciously creamy thanks to the avocado, crunchy almond butter and almond milk. I promise, it doesn’t taste of pond weed either! It’s vegan, Paleo, Whole30 and Gaps friendly too. It can be Keto adapted by playing with the amount of carrot. Jo x


Kale and Almond Butter Smoothie (Fruit Free)
INGREDIENTS
- 4 - 5 large carrots (370g)
- 1/3 large cucumber (140g)
- 3/4 large avocado
- Juice of 1/2 lemon
- 250 ml almond milk
- Handful of kale (35g)
- Handful of spinach (40g)
- 1 heaped tbsp almond butter
- 1/2 tsp chia protein or chia seeds
- 1 tbsp ground flax mix or shelled hemp seeds (I like Linwoods Milled Flaxseed, Almonds, Brazil nut, Walnut and Co-Enzyme Q10) but you can just use flax seeds if you prefer or leave out)
- 4 large ice cubes
Method
- Juice the carrots, cucumber and lemon.
- Add the juice to a Vitamix or high speed blender with all the remaining ingredients. Blitz until smooth and creamy.
- Pour into a glass and enjoy. If too thick, simply add a little more almond milk. The thickness all depends on the chia / flax / hemp combination you use.
