Say goodbye to faff of grilling or oven baking and hello to healthier and cleaner cooking. Plus guys, these salmon bites take under 8 minutes to cook and go crispy. Talk about quick win!
Airfryer Salmon Bites
INGREDIENTS
- 500 g salmon
DRESSING
- 2 tbsp extra virgin olive oil
- 1 tsp dijon or hot mustard
- 1/2 tsp red wine vinegar
- Good pinch of salt and pepper
YOGHURT DIPPING SAUCE
- 1 tsp dill
- 1/4 cup coconut yoghurt or Greek if you prefer
- 1/2 tsp lemon juice
- 1 tsp olive oil
- Pinch of salt and pepper
Method
- Cut the salmon into 1.5 inch cubes.
- Mix dressing together in a small bowl.
- Toss salmon in half of the dressing.
- Preheat air fryer to 400F / 200C and spray basket with oil or line with greaseproof paper for easy clean up.
- Add salmon skin side down and cook for 7 - 8 mins until cooked through and crisp, or to your liking.
- Mix the dipping sauce ingreds together in a small bowl.
- Serve with drizzle of the dressing and dipping sauce. Serve with your favourite salad, rice or roasted veggies.
