INGREDIENTS

  • 4 chicken thighs, skinless and boneless, diced into 1 inch pieces
  • 2 tbsp extra virgin olive oil
  • 1 medium leek, finely diced
  • 2 ribs celery, diced small
  • 1 large courgette, diced
  • 1 medium fennel, finely sliced
  • 3 cloves garlic, minced (use 1 tbsp garlic oil for low for map)
  • 1 tbsp fresh thyme leaves
  • 2 tbsp fresh rosemary leaves, chopped
  • 3 bay leaves
  • 3/4 tsp flakey sea salt
  • 1/2 tsp cracked black pepper
  • 1.2 l chicken stock
  • 1 cup savoy cabbage, shredded or kale
  • 1 tsp apple cider vinegar

TO SERVE

Method

  • Heat 2 tbsp olive oil in a large soup pot. Add the chicken and season with salt and pepper. Cook for 3 mins.
  • Add leek, courgette, celery and fennel. Cook on a medium heat for about 4 mins until veggies are soft. Add the garlic, herbs, salt and pepper for 1 min.
  • Add stock to veggies, along with cabbage. bring to a boil then reduce to a simmer and cook for about 15 mins until it thickens. I like to blitz a small amount by adding a stick blender and pulsing it a few times. This thickens the soup and also adds great flavour without having to add a thickener.

TOPPINGS

  • Preheat the oven to 180C / 160fan and line a baking tray with parchment. Add olives, capers and artichokes and bake for about 15 mins. Add parma ham slices and cook for a further 3 mins until crispy, adding the chorizo for about 1 min to release its oil.
  • Add apple cider vintage to soup and adjust seasoning to taste. Top with crispy olives, capers, artichokes, parma ham and chorizo.
  • Top with fresh herbs and a good drizzle of olive oil.
