I’m telling you guys, this crispy Za’atar Chicken is the absolute bomb dot com! It’s quick and easy to prep, super juicy, and unbelievably delicious. Any other hungry munchkins in your house will absolutely love it too — my resident hungry caterpillar Mr. B sure did! This crispy Za’atar Chicken is such a tasty way to shake up your usual chicken recipes, and it’s become a firm favourite in our house. I hope you love it as much as me!

Your new favourite ingredient: Za’atar

If you don’t already know, then get to know guys! Because za’atar is the latest dried herb mix to rise through the insta foodie popularity ranks, and for good reason. It’s got all the delicious earthiness from dried herbs, with a tangy kick from zingy sumac, and finished off with nuttiness from toasted sesame seeds. It has such a unique, Middle Eastern flavour that pairs incredibly well with chicken.

For this recipe I used the Palestinian Za’atar mix from Olive Odyssey. This stuff is totally knock-your-socks-off good guys! Seriously one of the best za’atar blends i’ve tried, and it gives this chicken recipe some proper OOMPH!

Top Tips and Recipe Hacks

Don’t be afraid of spatchcocking the chicken here. If you’ve not done it before then fear not, because i’ve given a step-by-step run down in the recipe instructions. Once you’ve done it once you realise how easy it is to do, and it will most likely become your new go-to for cooking a whole chicken. It’s makes for a properly delicious (and crispy!!) chicken, that stays juicy and is so much quicker and easier to cook that a whole chicken. You know sometimes when you do a whole chicken and the legs are undercooked compared to the breast, well not with spatchcocking, it’s all juicy, moist and crisp!

I cooked my chicken in the air fryer which is just my absolute favourite crispy chicken hack. It’s such a fool proof way to cook a whole chicken and I find its near perfect every time!

Must-Have Ingredients

As always guys, the quality of ingredients you use makes all the difference. For this crispy air-fryer Za’atar Chicken I’ve sourced some of the key ingredients from Olive Odyssey. Their Jerusalem extra virgin olive oil is so rich, flavoursome and a little peppery, I cannot get enough of the stuff! Some women drink wine, me olive oil! It pairs so well with the za’atar for a super easy but incredibly delicious chicken seasoning.

For those of you who are on a low-fodmap, just omit the garlic. The za’atar and olive oil does most of the heavy lifting flavour-wise for this recipe, so you won’t be missing out!

What’s the best thing about this za’atar chicken recipe? It is so versatile! Pair with any number of your favourite sides for a tasty and nourishing weeknight meal. Or if you’re a protein fiend like me, just munch away at the chicken as-is, I won’t tell anyone!

This za’atar chicken would pair so well with a light and bright slaw, like my go-with-everything green slaw. If you’re not low-carb, then this chicken recipe would absolutely fire with some crispy smashed potatoes. You could even sprinkle over some sumac for some properly sexy spuds! Some fluffy white rice and crunchy green veggies would also match that bright, refreshing vibe or simple roasted veggies. How are you planning to serve yours. Let me know in the comments below. Za'atar Chicken

This crispy zaatar chicken is such a tasty way to shake up your usual chicken recipes, and it's become a firm favourite in our house. I hope you love it as much as me!

TO SERVE

  • 1 tbsp coriander, finely chopped

Method

AIRFRYER

  • Preheat the Air fryer to 180C.
  • Remove any chicken giblets, then splay open the chicken, breast-side down. To remove the spine, run a finger along the back of the chicken to identify the bone and the soft outer side of the ribcage. Using strong kitchen scissors or a knife, start at the tail end of the chicken and cut along one side of the backbone until you reach the neck. Repeat on the other side of the backbone. 
  • Removed the entire backbone from the chicken and discard. Turn the chicken over so that it's breast-side up. Open it up like a book and press down firmly on the breastbone until the chicken is flat. Tuck the wings behind the breast to prevent them from overcooking.
  • Mix olive oil, za'atar and if using garlic together and rub over the skin side of the chicken and underneath the skin. Season with pepper and optional salt pepper. (Depends if your zataar contains salt.)
  • Place chicken in the air fryer skin side up. Cook for 55 minutes until cooked through and crisp.
  • Allow to stand of 10 minutes then carve or shred the chicken and serve with a squeeze of lime and fresh coriander.

OVEN

  • Preheat the oven to 425F / 220C / 200 fan.
  • Repeat steps 2 - 4 above from the Air fryer method.
  • Place the chicken in a roasting tin skin side up. Cook for about 45 - 50 minutes until cooked through and crisp, and a meat thermometer reads 165F.
  • Allow to stand of 10 minutes then carve or shred the chicken and serve with a squeeze of lime and fresh coriander.
