
How super cute are these courgettes in blankets? These bite-sized beauties are my healthy take on pigs in blankets. Perfect finger food for the Christmas buffet.
Mini roasted courgettes wrapped in thin, crispy layers of 100% natural, preservative free parma ham from Prosciutto di parma. Quick and simple to make and so tasty you’ll be making them time and time again. Oh and thanks to the sulphite free parma ham they’re free from the top 14 allergens and autoimmune friendly.
Ingredients
- 320g mini courgettes
- 1 packet (6 slices) of preservative free Parma Ham
- 2 tablespoons of Olive oil
- Pinch of Pink Himalayan or sea salt
Method
Preheat the oven to 190C (fan assisted.)
Place the courgettes on a baking tray. Coat in 2 tablespoons of olive oil and roast in the oven for 15 minutes. After this time, wrap half a slice of parma ham around each courgette and place back in the oven for 20 minutes until the ham is all crispy and delicious.
That’s it. Super simple. Now who said Christmas cooking was stressful.
Free from Christmas
This courgettes in blankets recipe is part of a ‘Free From’ Christmas challenge some of my dearest foodie friends set ourselves to help inspire you guys following free from diets and show that even if you’re missing a few ingredients you can still enjoy wonderful Christmas food, you just got to get creative!
We decided to create a virtual allergy friendly christmas table. All our dishes are free from the top 14 allergens. Not everyone’s is Paleo or sugar free like mine though so please take note of the ingredients if you are. Over the next two weeks we’re all taking it in turns to post a recipe to bring to the free from buffet. Now this is one party i’m not missing out on this festive season. Who’s coming along? My part
I literally jumped at the offer to take part in this challenge because eating free from has changed my life. I barely remember the girl who battled pain everyday because of my autoimmune condition. Changing my diet has literally changed my life. It helped me take control back of my life from my condition and i’ve never looked back. We want to show that you can still enjoy delicious, free from food at Christmas and what’s more, it’s easy to make and a whole heap of fun.

ah so pleased you like them Mel. Yes pigs in blankets can be a bit greasy if you don’t get a good quality sausage with a lower fat content. These are definitely a lighter option.
