Roasted Broccolini With A Ginger Lime Dressing

Does your loved one have a favourite ingredient that they love you to make into a recipe for them? Mr B’s is broccoli (as well as chocolate… but we won’t even attempt to put those two together!) This week he’s been super tired so I wanted to spoil him with something broccoli themed. And so came about this delicious Roasted Broccolini With Ginger and Lime.

Personally I can’t get excited about broccoli boiled, just boring! But when you roast it so its beautiful flowery heads go all crispy and then smother in a tangy sesame, ginger and lime dressing I somehow fall madly in love… again. Don’t worry Mr B, there’s enough love in this heart for the two of you!

Benefits of Broccoli

Broccoli is a nutrition powerhouse. Full of antioxidants, fibre and is said to help decrease the risk of diseases like cancer. It’s a wonderful vegetable to pack into your diet, and low in net carbs if you’re following a Keto, Paleo or low carb diet.

I hope you enjoy this dish as much as Mr B and I did. If you’re following a gut healing protocol right now like Autoimmune Paleo, simply leave out the nuts and replace the sesame oil with olive oil for an AIP alternative. Option to activate the nuts (soak in water for 12 hours) and then roast to remove the phytic acid which makes them more digestible.

Roasted Broccolini With Ginger And Lime

INGREDIENTS

  • 400 g broccolini / tenderstem broccoli
  • 1 tbsp + spray of extra virgin olive oil or coconut oil
  • 1 bulb of garlic
  • 40 g almonds
  • 1 tsp sesame seeds

Ginger and Lime Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tbsp toasted sesame oil
  • 1 heaped tbsp grated fresh ginger
  • Juice of 1/2 lime
  • 1 tbsp coconut aminos
  • Pinch of Pink Himalayan or sea salt
  • Pinch of cracked black pepper

Method

  • Preheat the oven to 190C (fan assisted.) 210C / 410F.
  • Cut the garlic bulb in half lengthways. Option to use 2 if you love garlic! Place on a baking tray and spray or drizzle with a little olive oil. Roast in the oven for 15 minutes.
  • Add the broccolini to the baking tray and toss with 1 tablespoon of olive oil or melted coconut oil. Massage into the broccolini heads and sprinkle with a pinch of salt. Roast both in the oven for a further 8 minutes.
  • Mix the dressing ingredients together in a small bowl.
  • Add half the dressing to the tray bake and mix well. Add the almonds and sesame seeds. Roast for a further 5 minutes until the broccolini is crisp and the almonds slightly golden.
  • To serve, squeeze the roasted garlic from it's casing and drizzle with the remaining dressing.
