If you’re looking for a healthy cake to brighten your week this Flourless Vegan Apple Cake is waiting just for you. Many of vegan cakes can contain a lot of maple, this healthy vegan cake uses just a small amount plus lots of lovely apples to sweeten naturally.

Why this Vegan Apple cake?

Not only is the flavour lip your lips amazing, but it’s flourless, using ground almonds and coconut flour in place of grains so better for your gut health and the texture is awesome. I used a mix of pureed apples and some chunky slices so you get a wonderful moistness and then bursts of whole apple. It’s so good.

How is best to serve this flourless cake?

Feel free to enjoy naked (the cake, not you… though go naked if you feel like it! LOL) or serve with a good dollop of coconut yoghurt, (I love Coyo) vegan cream or ice cream.

Vegan Flourless Apple Cake

INGREDIENTS

  • 3 tbsp flax meal
  • 7.5 tbsp water
  • 325 g apples, peeled and cored
  • Squeeze of lemon juice
  • 1/4 cup maple
  • 1 cup almond flour (100g)
  • 2 tbsp coconut flour
  • 2 tsp GF baking powder
  • 2 tsp cinnamon
  • 1 + 1/4 tsp ground ginger
  • 1/6 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 tsp vanilla extract or powder
  • 100 g coconut oil or vegan butter, melted
  • 25 g unslated almond or peanut butter
  • 1/2 tbsp acv

Method

  • Preheat the oven to 180C / 160fan.
  • Prepare the flax eggs by mixing the milled flax and water in a bowl. Place to one side to swell for 10 minutes.
  • Keep one apple to one side for the topping. Slice the rest thinly. Place in a bowl and drizzle with 1 tbsp of maple.
  • Add half of the sliced apples to a pan along with the coconut oil, rest of the maple, vanilla, almond or peanut butter and apple cider vinegar. Simmer until the apples are soft. About 10 minutes. Allow to cool and blitz with a stick blender until smooth.
  • Mix all the dry ingredients together in a bowl. (Almond flour, coconut flour, baking powder, spices and salt.)
  • Add the cooked apple mix to the dry along with the flax egg. Fold through the rest of the sliced apples.
  • Line a 19 x 19 x 4cm baking tray with greaseproof paper. Add the batter. Slice the remaining apple and drizzle with lemon juice to prevent browning. Arrange on top of the batter and and brush with a little maple.
  • Bake in the oven for about 1 hr 5 minutes until you can insert and remove a skewer without many crumbs sticking. Don't over bake as this cake firms up when fully cool and you is meant to be luscious and moist. Allow to fully cool before slicing into 9 squares. Serve with coconut yoghurt or dairy free ice cream.
