
Plums, apples, almonds and vanilla. I can’t think of a better date. What’s even more comforting is when there is some sort of thick yoghurt or custard involved to cuddle all the flavours together. A grain free plum and apple crumble, perfect for Autumn and only 8 minutes hands on cooking time. I top with my favourite coconut yoghurt from Coyo … a bigger dollop than would normally be served!
A double almond grain free crumb, crisp, light and buttery. This has to be one of my finest ideas and so incredibly easy.
This grain free plum and apple crumble is refined sugar free and sweetened only with the fruit. Perfect Autumn food. Slouch pants optional!
Serves 6
Ingredients
- 6 plums (490g)
- 3 apples (320g)
- Juice of half a lemon
- 25ml of water
Grain Free Crumble Topping
- 130g of ground almonds
- 25g of flaked almonds
- 1 teaspoon of vanilla powder
- 2 tablespoons of coconut oil, soft not melted
- Pinch of salt
Method
Preheat the oven to 190C (fan assisted.)
Peel the apples and plums. Chop into chunks, discarding the apple cores and plum stones.
Add the apples, water and lemon juice to a pan on the hob and stew for 5 minutes on a medium heat. After the apples have been cooking for 3 minutes add the plums and stew together for a further 2 minutes (firm plums. If the plums are very ripe, no need to stew.)
Mix all the topping ingredients together in a bowl and rub in the coconut oil with your fingers.
Transfer the fruit to a baking dish. Top with the grain free crumble topping and bake in the oven for 20 -25 minutes until golden.
Top with coconut yoghurt. Option to use Greek yoghurt if you’re not dairy free.
