Paleo Apple and Blackberry Crumble

Oh crumbs… I’m two bowls through this Paleo Apple and Blackberry Crumble and the leftovers are calling me! There’s something so comforting about a good crumble. It’s like a snuggly hug from your favourite slouch jumper on a cold winter’s night. Sugar free, it’s sweetened naturally only from fresh fruit. Topped with an almond and coconut crumb and a dollop of my favourite Coyo coconut yoghurt.

Tell the devil in you he’s got the night off because tonight guys your angel wings should be fluttering… as puddings go, this Paleo Apple and Blackberry Crumble has a green light… nourishng, comforting and delicious.

Serves 2-3

Ingredients

  • 2 apples
  • 175g blackberries
  • 1 teaspoon Madagascan vanilla powder or the seeds from one fresh vanilla pod.
Grain free crumble
  • 25g desiccated coconut
  • 120g ground almonds
  • 30g flaked almonds
  • 15g butter (or coconut oil)

Method

Preheat the oven to 180C (fan assisted.)

Peel the apples and chop into chunks. Place the apples and half the blackberries with 2-3 tablespoons of water in a saucepan over a lowish heat and cook for about 10 minutes until the apples are soft but not mushy. Make sure you stir every few minutes to stop it sticking to the bottom of the pan. Add the vanilla and a little more water if needs be. It shouldn’t be so wet or too dry. If it’s not sweet enough for you, you can add a touch of honey.

Tip into an ovenproof dish and add the remaining blackberries.

Grain free crumble

Mix the coconut, ground and flaked almonds together in a bowl. Pour on top of the fruit mix and spread evenly. Top with small cubes of butter or coconut oil.

Bake in the oven for 20 minutes. Serve with coconut yoghurt or natural yoghurt if you’re not dairy free.
