Roasting the almonds really brings out the delicious nutty flavour and who doesn’t love chocolate? Using a combination of raw cacao and cacao nibs creates a healthy chocolate hit.
Cacao is not only full of antioxidants but it’s also a great mood improver! Lots of energy balls contain vast quantities of sugar or dates, in these balls the quantities are low but with just enough dates to be delicious. Too much sugar, even if it’s healthier alternatives is never a good thing so these are perfect if you’re a health conscious foodie too. Supergreen Cacao Energy Balls
Ingredients
- 125 g almonds
- 35 g coconut chips
- 1 tbsp chia seeds
- 1 tbsp Cacao Nibs
- 6 large Medjool Dates (stones removed)
- 3 tbsp Cacao Powder
- 2 heaped tbsp almond butter
- 1 tbsp coconut oil
- 1 tsp vanilla powder
- 1/4 - 1/2 tsp Supergreens Powder (I like Indigo Herbs)
- Pinch of salt (optional, only if not in the almond butter)
Method
- Preheat the oven to 200C / 400F (180C fan assisted.)
- Place the almonds on a baking tray and roast for 8 minutes until golden. Remove from the oven and allow to cool.
- Place in your food processor along with the coconut flakes, chia seeds and cacao nibs. Blitz.
- Add the dates, cacao powder, almond nutter, coconut oil, vanilla, super green powder and salt. Blitz until combined.
- Roll into balls and place in the fridge for 30 minutes to set. Store in the fridge for 5 days.
