These Vegan Cinnamon and Vanilla Baked Pears were a happy accident. Just goes to show that sometimes in life when you’re spontaneous, magic happens! I had all good intentions to make a soup today but when I was at the farmers market and eyed these cute, delicate pears, all plans skyballed out of the window!

Often I shy away from cooking pears because more often than not they’re clad in recipes calling for lots of sugar… tarte tatins, strudels and the likes and as you guys know I stay well clear of the refined stuff and prefer, where possible, just to sweeten naturally with fruit use fruit on it’s own. If dressed correctly, it doesn’t really need loads more sugar!

These Vegan Cinnamon and Vanilla Baked pears are wonderful simply alongside a little Coconut Yoghurt or topped on my Vegan Keto Oatmeal or Build Your Own Vegan Chia Porridge. Vegan Cinnamon and Vanilla Baked Pears (Sugar and Sweetener Free)

Cooking Time: 40 - 45 minutes
  • 5 small (360g) pears
  • 3 tbsp coconut oil, melted (I like Coconut Merchant)
  • 1 tsp vanilla powder
  • 1 tsp ground cinnamon
  • 3 small cinnamon sticks
  • 1 tbsp flaked almonds (optional - leave off for AIP)
  • Pinch of ground ginger (optional)
Method
  • Preheat the oven to 180C (fan assisted) / 200C / 400F.
  • Peel the pears and slice in half lengthways. Remove the seeds. Option to keep the stalks on as they look pretty when presenting! Place the pears on a baking tray.
  • Mix the coconut oil with the vanilla and cinnamon. Option to add a pinch of ginger too if you like. Coat the pears with the spiced oil and add the cinnamon sticks.
  • Bake in the oven for 35 - 40 minutes until golden. Turn the pears half way through the cooking time and baste in the juices.
  • Serve the Vegan Cinnamon and Vanilla Baked Pears with coconut yoghurt or use as a topping on my Noatmeal or Build Your Own Chia Bowl. All delicious! (Link to both are above.)
