Vegan Keto Chocolate Avocado Brownies

I’ve had a nut free, egg free, dairy free and grain free brownie on my to make list for a while. All I can say guys is, good things come to those who wait! Vegan Keto Chocolate Avocado Brownies that are moist and as far as sweet treats go, actually good for you.

These vegan keto brownies are full of healthy monounsaturated fats from the avocados and lets not forget everyone’s best friend, raw cacao ,that will keep you happy and smiling all day long.

These nut free keto brownies are great if you want a sugar free treat that’s healthy and low carb. I hope you enjoy them as much as we did.

Vegan – choose the maple option or low carb sweetener (your choice)

BASE

  • Prepare the flax eggs. Add the flax meal and water to a cup and mix to combine. Allow to rest for 5 minutes whilst you melt the chocolate.
  • Place the chocolate in a heat proof bowl over a pan filled with a little water. Simmer on a medium / low heat until melted, stirring occasionally.
  • Add all the base ingredients including the flax eggs to a food processor. Blitz to combine. Add the melted chocolate and blitz again until smooth. (NOTE: You may need to scrape the sides with a spatula.)
  • Line a baking tray with greaseproof paper. Add the Vegan Keto Chocolate Avocado Brownie batter and bake for 25 - 28 minutes until you can insert and remove a skewer without crumbs sticking. Try not to overbake as it will firm up as it cools.
  • Remove from the oven and allow to cool in the tray for 10 minutes and then on a wire rack until fully cool.

FROSTING

  • Add all the ingredients listed under frosting to a clean food processor and blitz until smooth. Taste and adjust the sweetness to taste. It's best to start with less sweetener and add to your palate, remembering the base is sweet too.
  • Once the brownie base has cooled, spoon on the frosting and level with a palette knife or spatula. Slice into 12 squares.
  • Store in a Tupperware in the fridge for up to 5 days.
