Have I just discovered the next tiktok trend? Like porridge oats but made in a tray. This might just be the best oats recipe i’ve ever made guys. A twist on baked oats but instead of hard baked oats these are lusciously creamy and smoother. Need I say any more? 100% plant based, super nourishing and oh-so heavenly, you’ll be craving these blueberry oats every breakfast time.

This recipe is your 10 minute ticket to creamy oat indulgence. All you need is just 5 totally natural, healthy ingredients and you’ll have yourself a protein packed, anti-oxidant boosting, plant powered brekkie!

Achieving the perfect consistency

I just love creating plant based recipes that taste just as good (if not better) than the original. The problem with swapping out the dairy for vegan alternatives is how to achieve that perfect creamy consistency, without using overly processed alternatives with loads of nasty additives.

I’m here to show you that you can have both indulgent and nourishing whilst keeping things dairy free and plant based.

 

My first top tip is to use some good quality jumbo oats.

The quality of the oats you use totally does matter guys. We don’t want any powdery nonsense or your oats will end up soggy and disappointing. Jumbo oats are the way to go if you want the most deliciously thick and creamy consistency.

Stay away from the “quick soak” stuff too, as it completely destroys the point of oats as a great slow-release wholegrain. Quick soak = quick digestion, which means an energy spike and crash, and nobody needs that in the morning. Stick to the good stuff guys, the extra 10p on some good quality wholegrain jumbo oats is more than worth it. Quick oats have their place and I do like them in an oaty bar but for my traybaked oats, jumbo is the way to go.

 

Choosing the right nut milk.

The next important task. When I was making this recipe I wanted to choose a milk alternative that was super creamy and also packed with natural plant-powered protein. You can opt for whichever milk is your favourite, but I definitely recommend going for almond or cashew. They’re both high in protein and have a delicious creamy taste and texture. I never stray from using Plenish nut milks, simply because they’re deliciously creamy and only contain 100% natural ingredients, no gums, sweeteners or weird ingredients you can’t pronounce!

Last but not least; the plant based yogurt.

For that extra indulgent finishing touch we’re going to need a super thick and creamy yogurt, without any nasty additives or  sweeteners. The best I’ve found is Cocos Organic coconut yogurt. Guys when I tell you this is the creamiest plant based yoghurt on the market, I mean it! Indulgent and good for you, just what we’re aiming for!

INGREDIENTS

Method

  • Preheat the oven to 200C / 180 fan.
  • Add the oats, milk, vanilla and berries to a baking tray. Stir to combine. Bake in the oven for 8 - 10 minutes until soft. Stir through the coconut yoghurt and serve. Option to drizzle over maple if you require sweetness.
